Chocolate & Orange Cake (Vegan, Gluten Free)

As you may have seen over on Instagram I recently made this delicious chocolate orange cake based on a recipe from gluten-free-vegan blog Rhian's Recipes. For my versions I opted for olive oil and have tried both hazelnut and soy milks with great results - I love that it's so easy to substitute with what you have to hand. This recipe proves not only that free from foods can be delicious, but also that it doesn't have to be difficult to bake without the traditional ingredients.

One-Pot Mushroom Stroganoff (Vegan, Gluten Free)

This one-pot dish is based on a From My Bowl recipe which is so easy and quick to whip up with delicious results. I love it so much I've pretty much made it every week for the last couple of months! My favourite discovery from this recipe is how amazingly creamy any sauce can become with an added spoonful of cashew butter (I've even started doing this in my risottos!). I enjoy adding some leafy greens, broccoli or peas for extra colour, and also like to topped with a sprinkle of Follow Your Heart's vegan parmesan alternative.

Baked Blueberry Cheesecake (Vegan, Gluten Free)

One of my all time favourite sweet treats is a baked cheesecake so you can only imagine how over-excited I was when I saw this protein-packed cheeseless cheesecake from My Vibrant Kitchen pop up on my Instagram feed. Whilst most vegan cheesecake recipes are raw, or rely on cashews/coconut to create a creamy texture this one is also nut-free, using silken tofu to mimic that classic baked cheesecake texture. I switched out the Biscoff base for a simple gluten-free digestive one and the overall result was unbelievably good. I can't wait to try out the rhubarb version!

Veganized Fast Food Chicken Burger (Vegan, Gluten Free)

As mentioned in my last Free From Favourites post I recently discovered the Fry's Family Quinoa & Rice Protein Burgers which replicate a breaded chicken burger. Whilst I don't eat a lot in the way of the more 'realistic' meat replacements, these paired with Vegenaise and some freshly chopped iceberg lettuce make an excellent replacement for a fast food style burger. Serve with fries and a side salad for a veganized version of your old fast food favourites.

Katsu Stir Fry (Vegan, Gluten Free)

My new favourite way to use up leftover pre-made katsu sauce is adding it to a simple stir fry for an extra kick of flavour. Simply chop and fry your chosen veggies, add in cooked rice and the sauce, then top with salted peanuts for added crunch; the perfect quick and easy dinner for when your fridge is looking bare!
