Day 1 - 'Cheeseburger' Pasta/Casserole
The first recipe I decided to try out was the Cheeseburger Pasta! Although I'd always planned to substitute the beef for a vegetarian alternative I originally discovered this idea via Damn Delicious back when I was still eating dairy. There are several other takes on the idea out there but none of those I found were dairy, gluten and meat free so instead of following a recipe I decided to create my own. For my version I used soy mince, dairy free cheese and a corn-based gluten free pasta from Le Veneziane. I also added a couple of extras for the full 'burger' effect; toasted bread and lettuce leaves. If you'd like me to share the recipe in a future post, let me know!
Day 2 - Sausage & Vegetable Stew With Pesto
The second recipe idea I wanted to try out was sausage stew with added pesto, inspired by this post over at Sainsbury's. I love all things pesto so I couldn't resist adding this one to the challenge! Similarly to day 1 I didn't follow the actual recipe, instead taking inspiration to create my own free from pesto stew using soy sausages, carrots, shallots, shredded greens and lentils.
Day 3 - Patatas Bravas (Spanish Potatoes)
Recipe number three was these tasty Spanish Potatoes from Lauren Caris Cooks which involved roasting the potatoes instead of deep frying them for a 'lightened up' version. As the recipe was naturally vegan and gluten free I didn't have to make any substitutions, although I did opt to skip the vegan mayonnaise as I'm not a huge fan.
Whilst the original idea behind this challenge was to finally test out some of the many foodie recipes on my Pinterest boards, I have to confess that after discovering Lauren's website I've definitely pinned a few more!
